Les Ormes de Pez er en undervurderet Cru Bourgeois frembragt fra de grusholdige marker i nordlige del af Saint-Estèphe, hvor Atlanterhavet har større indflydelse end i den sydligere del af Bordeaux. 

Det mindre vinslot ejes i dag af Jean Michel Cazes, som også er i besiddelse af det mere kendte Cru Classé slot Château Lynch-Bages.

De gennemsnitlige 35 år gamle vinstokke står for Cabernet Sauvignon-andelen plantet på de mest grusholdige markbesiddelser, mens Merlot-delen står plantet på de mere sandholdige marker. 

Al høst og den efterfølgende selektering foregår ved håndkraft, hvorefter vinen er igennem en 20 dage lang temperaturkontrolleret maceration på stål.

Efterfølgende lagrer vinen 15 måneder på franske fade, hvor af 45% er nye.

93 point, Wine Enthusiast: 

"Ripe black-currant aromas and a smoky edge from tannins are lifted onto the wine's nutmeg spice and toast. They go along with the dense black fruits that are powerful and structured. Drink from 2027. — Roger Voss"

91-93 point, Jeb Dunnuck: 

"Managed by the team at Lynch-Bages, the 2021 Château Ormes De Pez comes from a 40-hectare vineyard in Saint-Estèphe. Medium to full-bodied, it has ripe tannins, good depth of fruit, and classic notes of darker fruits, loamy earth, tobacco leaf, and chalky minerality."

92 point, Decanter: 

"Juicy and lively, bright and vibrant with a crisp texture to the red berry fruit with creamy sides and a hint of graphite and wet stone underneath. It loses some oomph and impact towards the finish just tapering out but the initial expression was nice and it ends with a cool note. Might need some more time or might just need to be enjoyed in its youth for a light, delicate but fruit-forward style."
